RETHINKING RESTAURANTS - Part 3
Restaurants have been around for thousands of years, though the service model we currently use was basically invented a couple hundred years ago in Paris, France. Google it, read a book, do some digging... there have been a variety of service models over the years. I'm not convinced that the current models are sustainable, and I think perhaps we haven't even discovered the best version yet.
